  • 0.5 teaspoon active dry yeast
  • 0.75 teaspoon kosher salt
  • 7 ounces warm water (105°F to 115°F)
  • 1 tablespoon extra virgin olive oil
  • 1 cup pureed or crushed canned tomatoes
  • 23 garlic cloves (minced)
  • 7 ounces fresh mozzarella cheese (cubed)
  • Fresh basil leaves (torn)

Instructions

  1. In a medium bowl, whisk flour, sugar, yeast, and salt together.
  2. Add warm water and olive oil; stir until combined.
  3. Knead the dough on a floured surface for about 3 minutes until smooth.
  4. Place in a greased bowl, cover with a towel, and let rise for 2 hours or until doubled in size.
  5. Preheat oven to 550°F (285°C) with your baking stone/steel inside for at least an hour.
  6. Mix together pureed tomatoes, minced garlic, olive oil, salt, and pepper in a small bowl for the sauce.
  7. Divide the risen dough into two portions; let rest for 5-10 minutes.
  8. Shape one portion into a 10-inch circle on a semolina-dusted pizza peel.
  9. Spread half of the tomato sauce over the dough; add half of the mozzarella and basil leaves.
  10. Slide onto the preheated baking stone/steel and bake for about 7-8 minutes until golden brown.
