  • 1 small onion (diced)
  • 1 red bell pepper (seeded and chopped)
  • 1 red or yellow chili (seeded and chopped)
  • 14.5 oz canned chopped tomatoes (blended)
  • 3 garlic cloves
  • Thumb-sized piece ginger (peeled and sliced)
  • 3 cups vegetable stock
  • 1/3 cup brown rice (or any rice of choice)
  • Kosher salt and ground pepper (to taste)
  • Optional: yogurt for serving and parsley for garnish

Instructions

  1. Blend chopped tomatoes, garlic, and ginger until smooth; season with salt and pepper.
  2. Heat olive oil in a pot over medium heat; sauté onion, bell pepper, and chili until softened.
  3. Stir in brown rice for a couple of minutes.
  4. Add vegetable stock; cover and simmer until rice is tender (about 32-35 minutes).
  5. Stir in blended tomato mixture; simmer for an additional 5-10 minutes.
  6. Adjust consistency with more stock if needed; serve topped with yogurt and parsley.
