  • 1/3 cup brown sugar
  • 1/4 cup granulated sugar
  • 1 tbsp vanilla extract
  • 1 egg (room temperature)
  • 1 & 1/4 cup old-fashioned whole rolled oats
  • 1 cup all-purpose flour
  • 1/4 tsp cinnamon
  • Pinch of nutmeg
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 3/4 cup powdered sugar
  • 1.5 tbsp milk
  • 1/4 tsp vanilla

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, cream together softened butter, brown sugar, and granulated sugar until light and fluffy. Add the egg and vanilla extract; mix until combined.
  3. In another bowl, whisk together flour, oats, cinnamon, baking soda, and salt. Gradually combine dry ingredients into the wet mixture until just mixed.
  4. Scoop equal portions of dough onto the prepared baking sheet, flattening each slightly. Bake for about 10 minutes until golden around the edges but soft in the center.
  5. Cool on the baking sheet for about 20 minutes before transferring to a wire rack to cool completely.
