  • 2 pounds boneless beef chuck roast (or beef stew meat)
  • 4 medium carrots (cut into 1-inch pieces)
  • 1.5 pounds Yukon gold potatoes (cut into 1½-inch pieces)
  • 2 medium yellow onions (chopped)
  • 46 cloves garlic (pressed)
  • 3 cups unsalted beef stock
  • 2 tablespoons tomato paste
  • 1 tablespoon Worcestershire sauce
  • Fresh parsley for garnish

Instructions

  1. Cut the beef into 1½ inch chunks and season with salt and pepper.
  2. Set your Instant Pot to sauté mode and heat olive oil; sear beef in batches until browned.
  3. Add onions, carrots, potatoes, garlic, beef stock, tomato paste, Worcestershire sauce, Italian seasoning, thyme, and bay leaf to the pot.
  4. Secure the lid and cook on high pressure for 35 minutes.
  5. Allow natural pressure release for about 15 minutes before removing the lid.
  6. Create a cornstarch slurry with water, stir it into the stew to thicken it on sauté mode for a few minutes.
  7. Serve hot, garnished with chopped parsley.
