  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1 cup fresh basil leaves, chopped
  • 1 cup cherry tomatoes, halved
  • 8 oz burrata cheese, torn into pieces
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • 2 tbsp balsamic vinegar

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly spray a baking dish with nonstick cooking spray.
  2. Season chicken breasts with salt, pepper, and half of the chopped basil.
  3. In a skillet over medium heat, add olive oil and sear each chicken breast for about 4 minutes on each side until golden brown.
  4. Transfer the seared chicken to the prepared baking dish and top with cherry tomatoes and chunks of burrata cheese.
  5. Mix balsamic vinegar with a pinch of salt and pepper; drizzle over the chicken.
  6. Bake for 15-20 minutes until chicken reaches an internal temperature of 165°F (75°C).
  7. Serve hot, drizzled with additional balsamic vinegar if desired.
