  • 1/4 cup honey
  • zest and juice of 1 lime

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large mixing bowl, whisk together flour, cornmeal, sugar, baking powder, and salt.
  3. In another bowl, combine buttermilk, melted butter, and eggs; whisk until blended.
  4. Pour wet ingredients into dry ingredients; stir gently until just combined.
  5. Fold in corn kernels, jalapeños, and cheese.
  6. Pour batter into a greased baking dish.
  7. Bake for 25-30 minutes or until golden brown on top.
