  • 2 large Eggs
  • 1/4 cup Heavy Whipping Cream
  • 2 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • 1 pinch Nutmeg
  • 1 tsp Vanilla Extract
  • 1/4 cup Swerve Confectioner's Sugar Substitute
  • 1/3 cup Finely Grated Carrots

Instructions

  1. In a mixing bowl, combine almond flour, eggs, heavy whipping cream, baking powder, cinnamon, nutmeg, vanilla extract, Swerve sugar substitute, salt, and grated carrots. Mix until well combined.
  2. Heat a skillet over medium-low heat and lightly coat with cooking spray.
  3. Pour about ¼ cup of batter onto the skillet for each pancake. Cook until bubbles form on top (about 2-3 minutes), then flip and cook until golden brown on both sides.
  4. Repeat until all batter is used.
  5. Serve garnished with walnuts and sugar-free syrup.
