  • 5 Thin-cut boneless skinless chicken breast cutlets
  • 2 tbsp Olive Oil
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Oregano
  • Salt and Pepper to taste
  • 2 tbsp Butter
  • 2 tsp Minced Garlic
  • 1/2 Onion (chopped)
  • 2 Jalapenos (deseeded and finely chopped)
  • 1 tbsp Taco Seasoning
  • 1 bag Frozen Cauliflower Rice
  • 1 1/2 cups Shredded Mexican blend Cheese (divided)

Instructions

  1. Prepare cauliflower rice as per package instructions and set aside.
  2. In a skillet over medium-high heat, add olive oil and season chicken cutlets with chili powder, cumin, oregano, salt, and pepper before searing until golden brown.
  3. Remove chicken and reduce heat; add butter, onion, and jalapenos to the skillet until softened.
  4. Stir in minced garlic and cauliflower rice along with taco seasoning; mix well.
  5. Add one cup of shredded cheese to the mixture until melted; return chicken to the skillet and top with remaining cheese.
  6. Cover until everything is melted and combined; serve garnished with fresh herbs if desired.
