  • 2 lbs boneless chicken thighs
  • 2 tbsp olive oil
  • 1 tsp sesame oil
  • 1 bell pepper
  • 1 zucchini
  • 1/4 cup soy sauce (or coconut aminos)
  • 2 tbsp rice cooking apple vinegar
  • 2 tbsp water
  • 2 tbsp sugar-free honey
  • 1 tsp ginger paste
  • 2 tsp garlic (minced)
  • 1/4 cup cashews (chopped or whole)
  • 1/4 cup green onions (chopped)

Instructions

  1. Heat olive oil and sesame oil in a large skillet over medium-high heat.
  2. Add chicken, season with salt and pepper, and sauté until cooked through. Remove from the skillet.
  3. Sauté bell pepper and zucchini in the same skillet until tender.
  4. In a bowl, whisk together soy sauce, vinegar, water, honey, ginger paste, and garlic.
  5. Return chicken to the skillet, pour sauce over everything, and cook for an additional 2-3 minutes.
  6. Garnish with chopped green onions and cashews before serving.
