  • 2 1/2 cups almond flour
  • 5 large eggs
  • 1/2 cup pumpkin puree
  • 1/2 cup melted butter
  • 1/2 cup Swerve confectioner's sugar substitute
  • 1 tbsp ground ginger
  • 1 1/2 tsp ground cinnamon
  • 1/4 tsp ground cloves
  • 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine almond flour, eggs, pumpkin puree, melted butter, Swerve, baking powder, cloves, ginger, and cinnamon. Mix until well combined.
  3. Gently fold in chopped pecans.
  4. Pour the batter into a greased loaf pan and smooth the top.
  5. Bake for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  6. Allow to cool before icing with a mixture of Swerve and heavy cream.
