  • 3 large Eggs
  • 1 tsp Baking Powder
  • 2 ounces Cream Cheese (softened)
  • 1 tsp Vanilla Extract
  • 1 tsp Pumpkin Pie Spice
  • 2 tbsp Pumpkin Puree
  • 3 tbsp Swerve Confectioner’s Sugar Substitute (plus more for garnish)
  • 2 tbsp Butter (softened)

Instructions

  1. Preheat your oven to 450 degrees F and place a small cast iron skillet inside.
  2. In a blender, combine almond flour, eggs, baking powder, softened cream cheese, vanilla extract, pumpkin puree, pumpkin pie spice, and Swerve. Blend until smooth.
  3. Lower the oven temperature to 350 degrees F and carefully remove the hot skillet.
  4. Add softened butter to the skillet and swirl until melted.
  5. Pour the batter into the hot skillet; it should sizzle slightly.
  6. Bake for 15-20 minutes until puffed and golden brown.
  7. Dust with additional Swerve before serving.
