  • 3/4 cup Swerve Granular Sweetener
  • 1/4 cup butter
  • 6 tbsp butter (softened, for filling)
  • 4 ounces cream cheese
  • 1 cup Swerve confectioners sweetener

Instructions

  1. Preheat your oven to 350 degrees F and line a baking sheet with parchment paper.
  2. Melt the 1/4 cup of butter in the microwave for about 15 seconds and mix it with the Swerve Granular Sweetener using a hand mixer until well blended.
  3. Add in the egg and vanilla extract; mix until smooth.
  4. Combine almond flour, pumpkin puree, baking powder, baking soda, cinnamon, pumpkin pie spice, and salt into the bowl; mix until fully combined.
  5. Using a small scoop, form equal-sized rounds on the prepared baking sheet, leaving space between each cookie.
  6. Bake for 10-15 minutes or until edges are golden brown.
  7. Allow cookies to cool completely before preparing the filling.
  8. For the filling, beat together softened butter and cream cheese until smooth; then mix in Swerve confectioners sweetener and vanilla extract.
  9. Assemble by spreading filling between two cookies.
