  • 2 medium sweet potatoes, cubed
  • 12 oz Brussels sprouts, halved
  • 1/4 cup panko breadcrumbs
  • 1/3 cup maple syrup
  • 1/2 cup low sodium soy sauce
  • 2 tablespoons rice vinegar
  • Gochujang or sriracha sauce
  • 2 tablespoons sesame oil, divided
  • 1/4 cup milk
  • 3 scallions, thinly sliced (white ends and greens separated)
  • 1 teaspoon fresh grated ginger
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt, plus more to taste
  • 1 tablespoon cornstarch, plus 1 tablespoon water
  • Sesame seeds for garnish
  • Green onion for garnish

Instructions

  1. Preheat the oven to 425°F.
  2. On one half of a baking sheet, toss cubed sweet potatoes and halved Brussels sprouts with 1 tablespoon sesame oil and salt.
  3. In a bowl, mix panko breadcrumbs with milk and let sit for 5 minutes. Add ground beef, chopped scallions, minced garlic, grated ginger, salt, and gochujang; combine well.
  4. Form meatballs (about 1½ inches) from the mixture and place on the baking sheet alongside the veggies.
  5. Bake for 15 minutes then drizzle remaining sesame oil over meatballs before baking for an additional 10-15 minutes until cooked through.
  6. For the sauce, combine soy sauce, maple syrup, rice vinegar, garlic, ginger, and gochujang in a saucepan; bring to a boil.
  7. Mix cornstarch with water and add to boiling sauce until thickened.
  8. Toss baked meatballs in sauce before serving hot with garnishes.
