  • 1/2 cup extra-strong lavender Earl Grey tea (cooled)
  • 16 tbsp unsalted butter (for frosting)
  • 4 cups confectioner's sugar
  • 1 tsp whole milk (for frosting)
  • 1 tsp pure vanilla extract (for frosting)
  • 1/8 tsp salt (for frosting)
  • 1/4 cup extra-strong lavender Earl Grey tea (cooled, for frosting)
  • 1/4 tsp purple food color (optional)

Instructions

  1. Preheat oven to 350°F (175°C). Line two cupcake pans with baking cups.
  2. In a bowl, sift together flour, baking powder, and salt.
  3. Cream the butter and sugar in a stand mixer until light and fluffy.
  4. Add eggs one at a time, mixing well after each addition.
  5. Alternately mix in dry ingredients and wet ingredients (vanilla extract + milk) until just combined.
  6. Stir in cooled lavender Earl Grey tea until fully incorporated.
  7. Fill cupcake liners with batter and bake for about 18 minutes or until a toothpick comes out clean.
  8. For frosting, beat together butter and confectioner's sugar; add tea, vanilla extract, milk, and salt until fluffy.
