  • 2 cups cooked chicken breast (diced or shredded)
  • 2 cups dry pasta (penne, rotini, or bowtie)
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 red onion (thinly sliced)
  • 1/4 cup Kalamata olives (pitted and halved)
  • 1/4 cup fresh parsley (chopped)
  • 1/4 cup olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 2 cloves garlic (minced)
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and rinse under cold water.
  2. If using raw chicken breasts, season with salt and pepper and cook until fully cooked through. Allow to cool before dicing.
  3. In a bowl, whisk together olive oil, lemon juice, Dijon mustard, minced garlic, honey, dried oregano, salt, and pepper.
  4. In a large bowl, combine cooled pasta, chicken, cherry tomatoes, cucumber, red onion, olives, and parsley. Pour the dressing over the salad and toss gently.
  5. Serve immediately or refrigerate for about an hour to enhance flavors.
