  • 4 cod fillets
  • 2 tablespoons melted butter
  • 2 tablespoons olive oil
  • 4 cloves minced garlic
  • 1 whole lemon (juiced and zested)
  • 1 teaspoon smoked paprika
  • Salt and pepper (to taste)
  • 1 pound halved Brussels sprouts
  • 1 cup cooked quinoa or rice
  • Fresh parsley (chopped)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. In a bowl, toss halved Brussels sprouts with olive oil, salt, and pepper; spread on a baking sheet.
  3. Roast Brussels sprouts for about 20 minutes, shaking halfway through for even cooking.
  4. While roasting, mix melted butter, garlic, lemon juice and zest, smoked paprika, salt, and pepper in a separate bowl.
  5. Place cod fillets on another baking sheet; brush with the lemon garlic butter mixture.
  6. Bake cod for 12-15 minutes until flaky.
