  • 1 whole pasture-raised air-chilled chicken (4 to 5 pounds)
  • Juice of 1 lemon
  • 2 tbsp softened butter
  • 1 tsp salt
  • 1 tsp onion powder
  • 1 sprig rosemary (chopped)
  • 1 sprig thyme (chopped)
  • Juice of ½ lemon for finishing

Instructions

  1. Preheat your oven to 375°F (190°C). Pat the chicken dry with paper towels and place it in a Dutch oven.
  2. In a bowl, mix softened butter, lemon juice, salt, onion powder, rosemary, and thyme.
  3. Rub the marinade all over the chicken, including inside the cavity.
  4. Cover and roast for approximately 110 minutes. Baste halfway through if desired.
  5. After cooking, squeeze fresh lemon juice over the chicken and allow it to rest for 10-15 minutes before carving.
