  • 2 1/4 cups all-purpose flour
  • 2 cups granulated sugar (combined for crust and filling)
  • 1 tablespoon corn starch
  • 1/4 teaspoon salt
  • 1 cup unsalted butter (melted)
  • 6 large eggs
  • 3/4 cup lemon juice (freshly squeezed)
  • 1/3 cup corn starch (for filling)
  • 1/4 cup reduced raspberry puree

Instructions

  1. Prepare raspberry puree by blending fresh or thawed raspberries until smooth.
  2. In a mixing bowl, combine flour, sugar, corn starch, and salt; then mix in melted butter until crumbly. Press into a greased baking dish.
  3. Bake the crust at 350°F (175°C) for about 15 minutes until lightly golden.
  4. Whisk together sugar and corn starch in another bowl; add eggs one at a time, then stir in raspberry puree and lemon juice.
  5. Pour filling over pre-baked crust and bake until set but slightly jiggly in the center.
  6. Cool completely before refrigerating to chill, then cut into squares and serve.
