  • 2 lbs beef chuck, cut into cubes
  • 1 tablespoon olive oil
  • 1 large onion, diced
  • 2 cloves garlic, minced
  • 3 carrots, chopped
  • 2 celery stalks, chopped
  • 3 cups beef broth
  • 1 cup apple vinegar (optional)
  • 1 tablespoon tomato paste
  • 1 teaspoon Worcestershire sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • 1 cup frozen peas
  • Potatoes (about 2 lbs for 6 servings)
  • Butter
  • Milk

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season beef cubes with salt and pepper; brown on all sides. Remove from pot.
  2. In the same pot, sauté diced onion, minced garlic, chopped carrots, and celery for about five minutes until softened.
  3. Stir in tomato paste and apple vinegar (if using) for one minute. Add beef broth, Worcestershire sauce, herbs, and return the beef to the pot. Simmer covered for 1.5 to 2 hours until tender.
  4. Meanwhile, boil potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and milk; season to taste.
  5. Add frozen peas to the stew for the last five minutes of cooking before serving over mashed potatoes.
