  • 1 lobster tail (4–6 oz), chopped
  • 150g salted butter, divided
  • 250g angel hair pasta
  • 400g cherry tomatoes
  • 1 shallot, finely diced
  • 2 garlic cloves, minced
  • 1/4 cup broth
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh parsley and lemon zest for garnish

Instructions

  1. Bring a large pot of salted water to a boil.
  2. Cook the lobster tail in boiling water for 7–8 minutes until opaque; chop into bite-sized pieces.
  3. In a large pan, heat olive oil and 50g butter over medium heat.
  4. Sauté shallots and garlic for about 2 minutes until fragrant.
  5. Deglaze the pan with broth and reduce by about 80%.
  6. Add cherry tomatoes; cook for 10–15 minutes until they become jammy.
  7. Cook pasta al dente; reserve some pasta water.
  8. Toss cooked pasta in the pan with remaining butter and enough reserved pasta water to coat.
  9. Gently mix in chopped lobster, parsley, and lemon zest before serving.
