  • 4 Skinless, Boneless Chicken Breasts
  • 1 cup Plain Greek Yogurt
  • Juice of 1/2 Lemon
  • 1/2 Tablespoon Dijon Mustard
  • 1/2 teaspoon Garlic Powder
  • 1/2 teaspoon Onion Powder
  • 1/2 teaspoon Kosher Salt (or to taste)
  • 1/4 teaspoon Ground Pepper (or to taste)
  • 4 Hard-boiled Eggs (peeled and quartered)
  • 1 large Romaine or Cos Lettuce (chopped into large pieces)
  • 2 medium Avocados (pitted and chopped)
  • 1/4 cup Parmesan Cheese (shaved or grated)
  • 2 Tablespoons Chopped Chives (to garnish)

Instructions

  1. In a small bowl, whisk together olive oil, oregano, and salt. Marinate chicken in the mixture for at least 1 hour.
  2. For the dressing, mix Greek yogurt, lemon juice, Dijon mustard, garlic powder, onion powder, salt, and pepper in a bowl; refrigerate until serving.
  3. Cook marinated chicken over medium-high heat for 6-8 minutes on each side or until fully cooked. Rest before slicing.
  4. Boil eggs until hard-boiled; peel and quarter them.
  5. Chop romaine lettuce and slice avocados.
  6. In a large bowl, combine lettuce, avocado, egg quarters, and sliced chicken. Top with dressing and garnish with Parmesan cheese and chives.
