  • 1 pound boneless skinless chicken breasts
  • 1 red bell pepper (chopped)
  • 1/2 onion (chopped)
  • 3 tsp Greek seasoning
  • 1 tsp oregano
  • 2 tsp minced garlic
  • Juice from 1/2 a lemon
  • 1 zucchini (chopped)
  • 2 Roma tomatoes (chopped)
  • 3 ounces cream cheese (softened)
  • 4 cups chicken broth
  • 1/4 cup feta cheese
  • 1/4 cup Greek olives

Instructions

  1. Place chicken breasts at the bottom of a crockpot and sprinkle with Greek seasoning.
  2. Add chopped onions, bell peppers, zucchini, tomatoes, garlic, and cream cheese.
  3. Pour lemon juice and chicken broth over the mixture.
  4. Cover and set on high for 3 hours.
  5. Once cooked, shred the chicken using two forks and return it to the pot.
  6. Stir until well combined and serve hot garnished with feta cheese and olives.
