  • 16 ounces cream cheese (softened)
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • ladyfinger cookies or sponge cake (10-12 ounces, cut into cubes)
  • fresh mango slices for garnish
  • whipped cream for garnish
  • mint leaves for garnish

Instructions

  1. Prepare the Mango Cheesecake Layer: Blend one diced mango with lemon juice until smooth. In a mixing bowl, beat cream cheese until creamy; add powdered sugar and vanilla extract, mixing well. In another bowl, whip heavy cream until stiff peaks form, then fold into the cream cheese mixture along with the mango puree.
  2. Assemble the Trifle: In a trifle dish or serving glasses, layer ladyfinger cookies or sponge cake cubes at the bottom. Drizzle with some mango puree if desired. Add a layer of the mango cheesecake mixture on top. Repeat layers until all ingredients are used, finishing with the cheesecake layer.
  3. Chill and Garnish: Top with fresh mango slices, whipped cream, and mint leaves. Cover and refrigerate for at least 4 hours or overnight before serving.
