  • 1 tsp cinnamon
  • 1/2 tsp pumpkin pie spice
  • 1/4 tsp nutmeg
  • 1/4 tsp salt
  • 1 1/2 tbsp brown sugar (for coating)
  • 1 1/2 tbsp white sugar (for coating)
  • 1/2 tsp cinnamon (for coating)

Instructions

  1. Brown the butter in a saucepan over medium heat until golden brown and fragrant (5-7 minutes).
  2. In a large bowl, combine browned butter, dark brown sugar, vanilla extract, maple syrup, and pumpkin puree; mix until smooth.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, pumpkin pie spice, nutmeg, and salt.
  4. Gradually add dry ingredients to wet ingredients; stir until just combined.
  5. Chill dough in the refrigerator for about 15 minutes.
  6. Preheat oven to 350°F (175°C). Mix sugars and cinnamon for coating in a small bowl.
  7. Scoop tablespoon-sized portions of dough, roll into balls, coat with sugar mixture, and place on lined baking sheets.
  8. Bake for about 12 minutes until edges are set but centers remain soft.
  9. Cool on baking sheets for 5 minutes before transferring to wire racks.
