  • 3 pounds bone-in short ribs
  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup all-purpose flour
  • 2 tablespoons extra-virgin olive oil
  • 1 large yellow onion
  • 2 stalks celery
  • 1 medium carrot (optional)
  • 2 tablespoons tomato paste
  • 2 teaspoons fresh chopped thyme
  • 4 cloves garlic
  • 1 cup apple cider
  • 1/2 cup pure maple syrup
  • 2 cups beef stock

Instructions

  1. Season the short ribs with salt and pepper, then dust lightly with flour.
  2. In a heavy-bottomed pot, heat olive oil over medium-high heat and sear the short ribs until browned on all sides.
  3. Remove the ribs and sauté diced onion, celery, and optional carrot until softened.
  4. Stir in tomato paste and thyme, then add roasted garlic followed by apple cider. Scrape the pot to deglaze.
  5. Mix in maple syrup and beef stock before returning the short ribs to the pot.
  6. Cover tightly and braise on low heat or in a preheated oven at 325°F for about three hours until tender.
