Ingredients

Scale
  • 4 tbsp butter (or olive oil for a dairy-free version)
  • 3 tbsp maple syrup
  • 2 tbsp grainy mustard
  • 1 tbsp Dijon mustard
  • 1 tsp lemon juice
  • ½ tsp kosher salt
  • ¼ tsp pepper
  • 2 lb carrots

Instructions

  1. In a small saucepan over medium heat, melt the butter. Whisk in maple syrup, grainy mustard, Dijon mustard, lemon juice, salt, and pepper until well combined.
  2. Preheat your oven to 400°F (200°C).
  3. Peel and trim the carrots, then place them on a baking sheet. Drizzle most of the glaze over the carrots, tossing to coat evenly.
  4. Roast in the preheated oven for 30 to 35 minutes until tender. Stir occasionally and cover with foil if the glaze darkens too quickly.
  5. Once done, drizzle remaining glaze over the carrots and serve immediately.
