  • 1 tablespoon garlic paste
  • ½ teaspoon dried oregano
  • ½ teaspoon Italian seasoning
  • 6 skinless boneless chicken thighs
  • 2 tablespoons olive oil
  • 1 small yellow onion (finely diced)
  • 2 cloves garlic (minced)
  • 1 small lemon (thinly sliced)
  • ¼ cup white grape juice
  • 1 cup chicken broth
  • 1 cup marinated olives

Instructions

  1. In a large bowl, combine garlic paste, oregano, Italian seasoning, salt, and pepper. Add chicken thighs and coat evenly.
  2. Heat olive oil in a skillet over medium heat. Sear chicken thighs for about 5-6 minutes per side until golden brown; remove from pan.
  3. In the same skillet, sauté diced onions and minced garlic for about 3 minutes until softened.
  4. Add thinly sliced lemons and white grape juice to the pan; cook for another 3 minutes.
  5. Pour in chicken broth and return seared chicken thighs to the skillet. Bring to a boil then reduce to simmer for about 5 minutes.
  6. Stir in marinated olives; continue simmering for an additional 10 minutes.
  7. Allow dish to rest for 5-7 minutes before serving.
