  • 4 whole wheat tortillas
  • 1 cup fresh spinach, chopped
  • 1/2 cup feta cheese, crumbled
  • 1 cup mozzarella cheese, shredded
  • 1/4 cup red onion, sliced
  • 1 clove garlic, minced
  • 2 tablespoons olive oil
  • Salt and pepper to taste
  • 1 teaspoon dried oregano

Instructions

  1. In a skillet over medium heat, heat olive oil and sauté minced garlic until fragrant.
  2. Add chopped spinach and cook until wilted (about 2-3 minutes). Season with salt, pepper, and oregano.
  3. Lay out tortillas and fill one half with sautéed spinach mixture, feta cheese, mozzarella, and red onions.
  4. Fold tortillas in half and cook in a non-stick skillet over medium heat until golden brown on both sides (approximately 2-3 minutes each).
  5. Serve warm with tzatziki or a fresh salad.
