  • 1/4 cup sun-dried tomatoes
  • 1/4 cup minced red onion
  • 2 oz. frozen spinach
  • 1/4 cup crumbled feta cheese
  • 1 tsp dried oregano
  • 1/4 tsp garlic powder
  • 1/4 tsp salt
  • 1 Tbsp cooking oil
  • 5 hamburger buns
  • 1/2 cucumber (sliced)
  • 1/2 cup plain Greek yogurt
  • 1/2 Tbsp lemon juice
  • 1/8 tsp garlic powder
  • 1/8 tsp dried dill
  • 1/8 tsp salt

Instructions

  1. Prepare the Lemon Dill Yogurt Sauce by mixing Greek yogurt, lemon juice, garlic powder, dried dill, and salt in a bowl. Refrigerate.
  2. Finely chop sun-dried tomatoes, mince red onion, crumble feta cheese, and thaw spinach, squeezing out excess moisture.
  3. In a large bowl, combine ground turkey with sun-dried tomatoes, red onion, feta cheese, spinach, oregano, garlic powder, and salt. Mix until just combined.
  4. Shape into five patties and chill in the refrigerator for 15 minutes.
  5. Heat oil in a skillet over medium heat and cook patties for 5-7 minutes per side until browned and cooked through.
  6. Assemble burgers with yogurt sauce and fresh cucumber slices.
