  • 1 lb ground beef
  • 1 bag Success Boil-in-Bag Brown Rice or 1 heaping cup cooked brown rice
  • 1 yellow onion, diced
  • 3 fresh garlic cloves, minced
  • 3 small bell peppers, diced
  • 15.25 oz can corn, drained & rinsed
  • 15.5 oz can black beans, drained & rinsed
  • 16 oz jar of salsa
  • 1.5 cups Mexican-style shredded cheese
  • 1 oz taco seasoning mix
  • Olive oil
  • Salt
  • Black pepper

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare the brown rice according to package directions; set aside.
  3. In a large skillet over medium-high heat, add olive oil and ground beef. Season with salt and pepper; brown until fully cooked.
  4. Remove beef from skillet and sauté diced onion and bell peppers in the same pan for about five minutes until softened.
  5. Add minced garlic, taco seasoning, and salsa; simmer for a couple of minutes.
  6. Mix in cooked rice, reserved beef, corn, and black beans until well combined.
  7. Flatten mixture in the skillet and sprinkle cheese on top; bake for 10-15 minutes until cheese is melted.
  8. Serve hot with optional toppings like sour cream or fresh cilantro.
