  • 2 tbsp olive oil or avocado oil
  • 5 oz tomato sauce
  • 1 can diced tomatoes (12 oz)
  • 48 oz chicken broth
  • 2 chicken breasts
  • 1 can black beans (12 oz)
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1 tsp cumin powder
  • Salt and black pepper to taste
  • Chopped parsley and cilantro for garnish

Instructions

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and sauté until translucent.
  2. Stir in tomato sauce, diced tomatoes, and chicken broth. Bring to a boil.
  3. Add chicken breasts into the pot and season with salt, pepper, onion powder, garlic powder, smoked paprika, and cumin.
  4. Reduce heat to low and let simmer for about 30 minutes until chicken is fully cooked.
  5. Remove chicken breasts from the pot; shred them using two forks before returning them to the soup.
  6. Add black beans to the pot and simmer for an additional 5-10 minutes.
