  • ½ cup tomato sauce
  • 2 cups vegetable broth

  • 1 teaspoon chili powder (adjust to taste)
  • ½ teaspoon salt (to taste)

Instructions

  1. Heat vegetable oil in a large skillet over medium heat. Sauté the chopped onion for about 5 minutes until translucent. Add minced garlic and cook for another minute.
  2. Stir in uncooked rice, coating it with oil and toasting for about 2 minutes.
  3. Add tomato sauce and mix until well combined.
  4. Gradually pour in vegetable broth while stirring gently. Add cumin, chili powder, and salt; bring to a gentle simmer.
  5. Cover and reduce heat to low; cook for about 20 minutes until all liquid is absorbed and rice is tender.
  6. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork.
