  • 8 oz rotini or penne pasta
  • 2 cups corn kernels (fresh, canned, or frozen)
  • 1/4 cup mayonnaise
  • 1/4 cup sour cream
  • 1 tbsp lime juice
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • 1/4 cup chopped cilantro
  • 1/4 cup diced red onion
  • 1 jalapeño, seeded and diced (optional)

Instructions

  1. Cook the pasta according to package instructions until al dente. Drain and set aside to cool.
  2. Prepare corn by boiling or grilling fresh corn until tender or draining canned/frozen corn.
  3. In a large bowl, mix mayonnaise, sour cream, lime juice, chili powder, garlic powder, salt, and pepper to create the dressing.
  4. Combine cooled pasta, corn kernels, cilantro, red onion, and jalapeño (if using) in the bowl with the dressing. Toss gently until well mixed.
  5. Chill in the refrigerator for at least 30 minutes before serving.
