  • 3 cups vegetable stock
  • 1 chipotle in adobo sauce (minced)
  • 2 teaspoons sweet smoked paprika
  • 2 teaspoons cumin (ground)
  • 2 ears corn (shucked and grilled)
  • 2 limes (one juiced, one wedged for serving)

Instructions

  1. Heat olive oil in a soup pot over medium-high heat. Sauté onion and garlic until fragrant.
  2. Add chopped celery; cook until slightly softened. Stir in vegetable stock, red pepper, chipotle, smoked paprika, and cumin.
  3. Lower heat and let simmer for about 15 minutes.
  4. Grill corn on all sides until charred; cool before slicing off kernels.
  5. Blend soup until smooth using an immersion blender. Return corn kernels and lime juice to the pot; cook for an additional five minutes.
