  • 1/4 cup all-purpose flour (or gluten-free flour)
  • 2 large eggs (or aquafaba)

Instructions

  1. Preheat oven to 325°F (160°C). Mix graham cracker crumbs and melted butter until combined; press into muffin liners in a muffin tin.
  2. Bake crusts for 5 minutes; let cool.
  3. In a bowl, beat cream cheese until smooth; gradually add sugar. Incorporate vanilla extract, sour cream, flour, and eggs until creamy.
  4. Pour filling over crusts, filling each liner about 3/4 full. Bake for 20-25 minutes until edges are set but centers jiggle slightly.
  5. Cool at room temperature, then refrigerate for at least 2 hours before topping with fresh berries.
