  • 1/4 cup light brown sugar
  • 1/4 cup unsweetened cocoa powder
  • 1/4 cup Dutch process cocoa powder
  • 2 large eggs
  • 1/2 cup buttermilk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 4 oz Andes mints (for filling)
  • 1 cup unsalted butter (for frosting)
  • Peppermint extract

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, whisk together flour, sugars, cocoa powders, baking powder, baking soda, and salt.
  3. In another bowl, beat eggs; add buttermilk, oil, vanilla extract, and hot water. Mix until combined.
  4. Gradually combine wet and dry ingredients until just mixed.
  5. Fill cupcake liners two-thirds full and bake for 18-20 minutes until a toothpick comes out clean.
  6. For the ganache filling: melt Andes mints with heavy cream over low heat; cool slightly.
  7. Once cupcakes are cooled, fill centers with ganache.
  8. For frosting: beat room temperature butter; gradually mix in powdered sugar and cream until smooth; add peppermint extract.
  9. Frost cooled cupcakes and top each with an Andes mint.
