  • 90g unsalted butter (very cold)
  • 60ml cold water
  • 2 leeks
  • 1 small brown onion
  • 30g unsalted butter or olive oil
  • 2 large eggs
  • 120ml heavy cream
  • 35g grated Gruyere cheese
  • 1 pinch salt
  • 0.5 teaspoon minced garlic
  • 1 teaspoon table salt
  • 0.5 teaspoon pepper
  • 1 teaspoon ground cumin (optional)

Instructions

  1. For the crust, combine plain flour and salt in a bowl. Cut in cold unsalted butter until crumbly, then add cold water gradually until dough forms. Chill in the refrigerator.
  2. Sauté sliced leeks and chopped onion in melted butter (or olive oil) over medium heat until soft (about 5-7 minutes). Add minced garlic towards the end.
  3. In a bowl, whisk together eggs, heavy cream, salt, pepper, and optional cumin. Stir in sautéed veggies and grated Gruyere until combined.
  4. Roll out chilled dough to fit a tart pan and fill with the leek mixture.
  5. Bake at 375°F (190°C) for around 30 minutes until golden brown on top.
