  • 3 cups rolled oats
  • 1 cup semisweet or dark chocolate chips
  • 1/2 cup peanut butter

  1. Line an 8-inch or 9-inch square baking dish with parchment paper.
  2. In a large saucepan over medium heat, melt the plant-based butter and brown sugar until combined.
  3. Stir in vanilla extract and rolled oats, cooking on low heat for about 3-4 minutes.
  4. Press half of the oat mixture into the prepared baking dish to form a crust.
  5. In a separate bowl, melt the peanut butter and chocolate chips together until smooth.
  6. Pour the chocolate mixture over the oat crust, reserving some for drizzling later.
  7. Add the remaining oat mixture on top, pressing it down gently.
  8. Drizzle with reserved chocolate mixture if desired.
  9. Refrigerate for at least 2-3 hours before cutting into squares.
