  • 8 slices turkey bacon (chopped)
  • ¼ cup all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 4 tablespoons light butter
  • 1 ½ cups skim milk
  • 2 ½ cups water
  • 12 oz dry whole wheat elbow macaroni
  • 3 ½ cups broccoli florets
  • 6 oz reduced-fat sharp cheddar cheese (shredded)

Instructions

  1. Cook the turkey bacon in a large pot over medium heat until crisp. Remove and drain on paper towels.
  2. In the same pot, melt the light butter over medium heat. Whisk in the flour, salt, and pepper until smooth.
  3. Gradually add skim milk and water, whisking continuously until combined.
  4. Bring the mixture to a boil, then add the macaroni and cook for about 8-10 minutes until tender.
  5. Steam broccoli florets in the microwave for two minutes until bright green.
  6. Stir in shredded cheese and cooked turkey bacon into the pasta mixture until melted. Fold in broccoli before serving.
