  • 4 bone-in chicken thighs (approximately 1.5 lbs)
  • 1 medium sweet onion, finely chopped
  • 2 colorful bell peppers, thinly sliced
  • 4 cloves garlic, minced
  • 2 cups low-sodium vegetable broth
  • 2 tsp olive oil
  • 1 tsp dried oregano
  • 1 tsp smoked paprika
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Season chicken thighs with salt and pepper, then sear skin-side down for 5-7 minutes until golden brown; flip and brown the other side.
  2. Remove chicken and set aside. In the same pot, add onions and bell peppers; sauté for about 4-5 minutes until softened. Stir in garlic.
  3. Add oregano and smoked paprika; cook for another minute.
  4. Return chicken to the pot along with any juices; pour in vegetable broth until just covered. Bring to a gentle simmer.
  5. Cover and reduce heat to low; simmer for 30-35 minutes until chicken is tender.
