  • 1/4 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup diced fresh peaches (peeled)
  • 1/3 cup old-fashioned oats
  • 2 tablespoons melted butter
  • 2 tablespoons all-purpose flour
  • 2 tablespoons light brown sugar
  • 1/4 teaspoon ground cinnamon

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a medium bowl, whisk together flour, baking soda, cinnamon, and salt. Set aside.
  3. In a large bowl, cream the softened butter with granulated and brown sugars until fluffy. Beat in the egg and vanilla until combined.
  4. Gradually add dry ingredients to wet mixture until just combined. Fold in diced peaches gently.
  5. Prepare the streusel topping by mixing oats, melted butter, flour, brown sugar, and cinnamon until crumbly.
  6. Scoop tablespoon-sized portions of dough onto the prepared baking sheet and sprinkle with streusel topping.
  7. Bake for 13-15 minutes or until golden brown on the edges. Cool on a wire rack before serving.
