  • 1/4 cup pure maple syrup
  • 1 egg
  • 1/2 cup almond flour
  • 3 tbsp coconut flour
  • 1/4 cup white chocolate chips (or alternative)
  • 1 tsp vanilla extract
  • 1/2 tsp baking powder
  • 1/8 tsp salt
  • 1/3 cup jelly or jam of choice

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine peanut butter, maple syrup, egg, and vanilla until smooth.
  3. In another bowl, mix almond flour, coconut flour, baking powder, and salt.
  4. Combine the wet and dry ingredients; fold in white chocolate chips.
  5. Chill the dough for about 10 minutes in the refrigerator.
  6. Roll into teaspoon-sized balls and flatten slightly on a lined baking tray.
  7. Bake for approximately 10 minutes until golden around the edges.
  8. Cool on a wire rack before assembling with jelly or jam between two cookies.
