  • 2 1/2 cups graham cracker crumbs
  • 1/4 cup brown sugar
  • 10 tablespoons unsalted butter (melted)
  • 1 1/2 cups packed brown sugar
  • 2 teaspoons ground cinnamon
  • 1 1/2 cups heavy cream
  • 2 1/2 cups chopped pecans
  • 24 ounces cream cheese (room temperature)
  • 3/4 cup packed brown sugar
  • 1/2 cup sour cream (room temperature)
  • 1 teaspoon pure vanilla extract
  • 4 large eggs (room temperature)

Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs, brown sugar, and melted butter. Press firmly into the bottom of a greased springform pan. Bake for about 10 minutes until lightly golden.
  2. In another bowl, beat together room temperature cream cheese and brown sugar until smooth. Mix in sour cream, heavy cream, eggs, and vanilla extract until just combined.
  3. Toss chopped pecans with ground cinnamon and additional brown sugar in a separate bowl. Gently fold half into the cheesecake mixture.
  4. Pour half of the batter over the crust; drizzle with half of the remaining pecan mix. Add the remaining batter and top with leftover pecans. Bake for approximately 75 minutes until set but slightly jiggly in the center.
  5. Let cool for an hour before transferring to chill in the refrigerator for several hours or overnight.
