Ingredients

Scale
  • 1/2 cup vegetable oil
  • 1 cup granulated sugar
  • 2 eggs
  • 1/2 teaspoon almond extract
  • 1 cup milk
  • 2 cups all-purpose flour
  • 1 (3.4 oz) box pistachio instant pudding mix
  • 1/2 teaspoon salt
  • 2 teaspoons baking powder
  • Coarse sugar for the tops (if desired)

Instructions

  1. Preheat the oven to 425°F and line muffin tins with parchment paper liners.
  2. In a medium bowl, whisk together vegetable oil, sugar, eggs, almond extract, and milk until fluffy.
  3. In another bowl, combine flour, pistachio pudding mix, baking powder, and salt.
  4. Gently fold the wet mixture into the dry ingredients until just combined; lumpy batter is okay.
  5. Fill each muffin tin about 3/4 full and sprinkle coarse sugar on top if desired.
  6. Bake for 6 minutes at 425°F, then reduce heat to 350°F and bake for an additional 11-12 minutes.
  7. Cool muffins in the tin for about 5 minutes before transferring to a cooling rack.
