  • ¼ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 8 oz cream cheese, softened
  • 1 cup canned pumpkin puree
  • ¾ cup brown sugar, packed
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1 tsp pumpkin pie spice
  • ½ cup all-purpose flour
  • ¼ cup rolled oats
  • ¼ cup unsalted butter, cold and cubed

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, mix graham cracker crumbs, granulated sugar, and melted butter. Press into the bottom of an lined 8×8-inch baking pan.
  3. In a large bowl, beat softened cream cheese until smooth. Add pumpkin puree, brown sugar, eggs, vanilla extract, and pumpkin pie spice; mix until combined.
  4. In another bowl, combine flour, rolled oats, cold cubed butter, and brown sugar for the streusel topping; mix until crumbly.
  5. Pour cheesecake filling over the crust and sprinkle streusel on top. Bake for about 45 minutes or until the center is set. Cool completely before refrigerating for at least two hours.
