  • ¾ cup gluten-free rolled oats
  • ¾ cup raw cashews
  • ¼ teaspoon kosher salt
  • 2 tablespoons caster sugar
  • ¼ cup coconut oil (melted)
  • 24 ounces cream cheese (softened)
  • 1 cup caster sugar
  • 6 large eggs (at room temperature)
  • 1 tablespoon vanilla extract
  • 1 teaspoon cinnamon powder
  • 15 ounces pumpkin puree

Instructions

  1. Preheat the oven to 350°F and line an 8 or 9-inch square pan with parchment paper.
  2. In a food processor, combine the oats, cashews, salt, and sugar. Blend until fine, then add melted coconut oil and pulse until it sticks together.
  3. Press the crust mixture into the prepared pan and bake for 12 to 14 minutes until lightly golden. Lower the oven temperature to 325°F.
  4. In a large mixing bowl, beat cream cheese, caster sugar, eggs, vanilla extract, and cinnamon powder until smooth. Set aside one-third of this mixture.
  5. Add pumpkin puree to the remaining mixture and mix until combined.
  6. Pour the pumpkin layer over the baked crust; spoon dollops of plain cheesecake on top and swirl.
  7. Bake for 40 to 42 minutes until edges are set but center is slightly jiggly.
