  • 1 1/2 cups dark or semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice.
  3. In another bowl, mix cane sugar, coconut sugar, coconut oil, egg, ground flax seed, vanilla extract, and pumpkin puree until smooth.
  4. Gradually add dry ingredients to wet ingredients and mix on low speed until just combined.
  5. Fold in chocolate chips until evenly distributed.
  6. Use a cookie scoop to drop dough onto the prepared baking sheet, spacing them about 2 inches apart.
  7. Bake for 10-12 minutes or until slightly browned at the edges.
  8. Let cool on the pan for five minutes before transferring to a cooling rack.
