  • 1 can (15 oz) pumpkin puree (not pumpkin pie filling)
  • 3/4 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup vegetable oil or melted butter
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 2 tsp pumpkin pie spice
  • 1/2 tsp salt
  • 1 tsp vanilla extract
  • 1 cup semi-sweet chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, whisk together flour, baking powder, baking soda, pumpkin pie spice, and salt.
  3. In another bowl, combine pumpkin puree, brown sugar, granulated sugar, oil (or melted butter), eggs, and vanilla extract; mix until smooth.
  4. Pour the wet mixture into the dry ingredients and fold gently until just combined.
  5. Fold in 3/4 cup of chocolate chips; reserve the remaining for topping.
  6. Divide the batter evenly among muffin cups, filling each about two-thirds full.
  7. Sprinkle reserved chocolate chips on top.
  8. Bake for 18-22 minutes or until a toothpick comes out clean from the center.
  9. Allow to cool in the tin for about five minutes before transferring to a wire rack to cool completely.
