  • 2 large eggs
  • 1/2 cup unsalted butter
  • 1/4 cup pine nuts (optional)

Instructions

  1. Prepare the pumpkin puree by roasting fresh pumpkin at 400°F (200°C) for 30-40 minutes until tender, or use canned pumpkin.
  2. In a large bowl, mix together pumpkin puree, flour, Parmesan cheese, nutmeg, salt, pepper, and eggs until a soft dough forms. Avoid overworking it.
