Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a large bowl, mix together melted butter, pumpkin puree, sugar, egg, and vanilla until smooth.
  3. Stir in flour, pumpkin pie spice, baking powder, and salt until a dough forms.
  4. Chill the dough for about 25 minutes.
  5. Roll into balls (about 1½ tablespoons each) and place on a parchment-lined baking sheet.
  6. Bake for around 18 minutes until lightly golden.
  7. For frosting, beat cream cheese and butter until creamy; gradually add powdered sugar and vanilla.
  8. Cool cookies completely before frosting.
